Maintaining the correct moisture content is crucial in sugar processing to ensure a top-notch final product. The ideal moisture levels vary depending on the type of sugar being processed:

  • White sugar: 0.02–0.05%
  • Raw sugar: 0.25–1.10%
  • Sugar cubes: 1.8%

The drying phase involves the use of heat to eliminate excess moisture from the sugar. This step is typically carried out in dryers or coolers known as “granulators”, which help in separating the sugar crystals. The most effective way to remove moisture is by blowing hot air through a falling sugar curtain or a wet sugar moving bed.

Following the drying process, the sugar is cooled to the optimal temperature for storage and transportation. Skipping this cooling step can lead to clumping and discoloration of the sugar during storage, ultimately affecting its quality and market value.

Moisture content can be accurately measured using MoistTech moisture analyzers that utilize near-infrared technology. Implementing a moisture measurement system in the production process can facilitate a closed-loop system and prevent costly complications.

What is the Solution?

MoistTech is very experienced with the requirements in the production of sugar. Our sensor calibrations, measurement wavelengths, algorithms, and sensor optical requirements are pre-set at the factory. Typical accuracy is about ±0.1% moisture. Typical analog range is 0-10% dry to wet sugar moisture and up to as much as 80% bagasse, subject to application. The outputs can be adjusted to optimize PLC or recording requirements.

If the sensor is susceptible to extreme heat conditions, it is necessary to cool the sensor with either air or water. Generally, dust from the product is not normally a problem. But, in extreme or dusty environments, we recommend the installation of an air purge system to prevent the accumulation of material on the sensor’s window.
